Annual market of proteolytic enzymes among industrially produced enzymes is over 8,000 crore. These enzymes are widely applied in detergent industry, beverage industry, bread and confectionery industry, cheese industry, leather and meat industry, etc. Industrial application of some of the enzymes is described as below:

(i) Dairy and Cheese Industry:

Rennets (acid aspartate protease produced by Mucor michei) are used in dairy industry. Lactase produced by Bacillus stearothermophilus is used for lactose hydrolysis in whey or milk or cheese industry.

(ii) In Soap and Detergent Industry:

Proteinaceous dirt present on cloth can easily be removed by adding proteolytic enzymes to the detergent. Alkaline serine protease produced by Bacillus licheniformis is widely used in detergent industry.

(iii) Brewing Industry:

Alpha-amylase and f5-gluconase and protease are used in brewing industry.

(iv) Confectionery Industry:

Glucose isomerase produced by Actinoplanes spp. is used in confectionery industry.

(v) Pharmaceutical Industry:

Penicillin V/G acylase is used in pharmaceuticals for production of semi-synthetic penicillin, and glucose isomerase production for fructose syrup.
